From the GfK consumer behavior results we see that health is an important driver towards our consumers. In our developments we already implement the new algorithm of the Nutriscore calculation. Convenience means “quick and easy” to use. Consumers are looking for convenient, tasty products. Whit that in mind we developed a whole range of bits and bites for usage in all kitchens. For sustainability reasons we decided to publish this new VionSpiration online. This saves paper, ink, and transportation costs. Consumer Behavior Research The “GfK Consumer Monitor meat” is a yearly survey conducted by GfK in February and March, targeting consumers from the GfK panel in the Netherlands. Around two thousand consumers were asked about their opinions and behaviors regarding their sources of proteins. Vion is using this tool to align with the customers and consumers in the chain. Always looking for a good supply chain collaboration in the meat category and trying to find the right balance between supply and demand. Due to these consumer insights, we can foresee the trends. Meat is increasingly being regarded by meat consumers in the Netherlands as an essential part of nutrition. It is also being increasingly perceived as healthy and labeled as the most delicious component of a hot meal. It is seen as an indispensable part of the nutrition. Fair prices for farmers have become more relevant towards the consumers. About 75% of the consumers like a fair pricing for our farmers. Sustainability is also a topic in the GfK survey. We see that most consumers are trying to reduce food waste, would like to have less plastics for packaging and keeping a healthy and versatile diet.

De Groene Weg has been the goto address for organic meat in the Netherlands for over 40 years. During this time, we have grown from a small butcher shop in Utrecht to a company that promotes high-quality organic meat throughout the country. But it doesn’t stop there; we take extra steps to continuously further sustainabilize the chain, in addition to being organic. We believe that in a changing world, we must also adapt. From soil to animal feed, everything used in the production of organic meat by The Green Path complies with European regulations for organic agriculture*. Animals at our farmers’ places have the space to exhibit their natural behaviors and are free to go outside whenever they want. They also receive organic feed, cultivated without the use of chemical synthetic pesticides. The Green Path’s organic farmers take additional steps, such as delaying grass cutting, creating herbrich pastures, or sowing flowers to promote biodiversity on and around the farm. The manure from our animals is used for fertilizing organic fields, thus contributing to the organic food cycle. The animals’ way of life also ensures their health and high resistance to diseases. Organic production is carried out with respect for nature, animals, and farmers. That’s why we believe that organic farming is the most sustainable method of agriculture. 12 | VIONSPIRATION VIONSPIRATION | 13 Sustainable Circular Course ORGANIC PIGS WITHIN THE Ruben explains, “At some point, I simply made a call to the Twickel estate to inquire if they needed any organic manure. Winny and Arjen responded positively almost immediately, and it was quickly arranged! Now, my pigs lie on the straw from the Twickel estate, and my manure goes back to the estate. It’s a wonderful example of a local nutrient cycle.” Almost completely surrounded by the Twickel estate lies the pig farm of Ruben Exterkate. Since 2020, Winny and her husband Arjen van Buuren have been tenants of approximately 100 hectares of fields and pastures that they manage on behalf of the owner. Winny says, “Renting an estate is a perfect fit for us. We believe it’s important to leave something behind for future generations, and as tenants of an estate, we can do that. Of course, we practice organic farming and cultivate the land based on nature-inclusive principles, such as promoting biodiversity and soil health. The soil is our most valuable asset. Moreover, we deliberately demonstrate that the business model works, that it is profitable. We currently rent land on three estates and strive to operate as a mixed farm with a closed nutrient cycle. Our crop plan includes a variety of grains such as wheat, quinoa, rapeseed, and sunflowers. We sell these products through a short supply chain to local restaurants, farm shops, and bakeries, focusing on what the local market demands. It’s not just about ecological value.” Working within a local nutrient cycle Winny adds, “When cultivating organic crops, the use of organic manure is essential. On the Velhorst estate, we have a mixed farm with our own livestock, but not on the Twickel estate. Because we add less complexity with our 2D technique there is a significant positive effect on the affordability of the final products. Affordability is in the current market surroundings an important trend we cannot neglect when innovating. Our 2D technology is cutting-edge and enables the creation of patterns and shapes in our plant-based meat alternatives. We use digital files to create the shape, which is transferred to the physical features of the machine by 3D printing. At this moment we can use 2 doughs in one product, these can differ in color and structure to combine together in a specific shape. The difference in flavor, taste, and texture is something we really aimed for; to give an improved eating experience for the consumer. The 150kg “cartridges” can be filled with our best meat-like dough which is available in multiple flavors, sauce stuffings, or plantbased fat to mimic juiciness and texture differences. Although 2D is still a relatively new field, it holds immense potential for culinary innovation and creativity. Our newly installed 2D technology offers several benefits and applications. It allows for the creation of intricate designs, patterns, or more realistic mimicking of food as we did with our Plantrecote® and plant-bacon, making them visually recognizable and appealing. 32 | VIONSPIRATION VIONSPIRATION | 33 Ofenkrusten CRUNCHY ON TOP. OVEN CRUNCHED. The combination of nice tender filet with a crispy topping is unique. The toppings can vary in texture and flavour. For this magazine we selected: - garden herbs flavour - tomato flavour - curry flavour - garlic pepper flavour. To ease the use for the consumer we packed the oven crusts in a wooden tray. Just put it in the oven or airfryer and your delicious meal is ready. “Ofenkrusten” is a German term that translates to “oven crusts” in English. It typically refers to a variety of baked goods that have a crispy or crusty texture. These can include bread rolls, baguettes, pretzels, or other breadbased products that are baked in the oven to develop a crunchy exterior. “Ofenkrusten” can also be used to describe dishes where a crust is formed on top through baking, such as casseroles or gratins. This crispy Ofenkrusten is really easy to prepare.
34 | VIONSPIRATION VIONSPIRATION | 35 Future of packaging Reducing plastics as part of corporate social responsibility (CSR) goals in business is essential for promoting sustainability and minimizing the environmental impact of operations. Packaging Types MODIFIED ATMOSPHERE PACKAGING (MAP TRAY) MAP trays are available in different sizes and heights. The packaging offers maximum strength with minimum weight. Also available with one or more compartments or with special inserts. VACUUM SKIN PACKAGING (VSP) VSP wraps tightly around the product’s shape, acting as a second skin while removing all atmosphere from within the package. VACUUM SKIN ON CARDBOARD Vacuum skin on cardboard is a more luxurious and environmentally friendly form of the a forementioned VSP. Instead of sealing the product on a plastic tray, it is sealed onto a cardboard sheet. This can be printed in its entirety, giving it a more luxurious appearance. After removing the skin, the cardboard can be recycled as waste paper. Various packaging options At Vion, we offer different types of packaging. We would be happy to tell you more about these options. It is important to know that not all types of packaging are suitable for all products. FRESH PRE-PACKAGED We have different types of packaging available for fresh pre-packaged products. We have the following options: • Modified atmosphere packaging (MAP tray) • Vacuum skin packaging (VSP) • Vacuum skin on cardboard • Thermoforming packaging DELI MEAT PRODUCTS Our deli meat products are packaged in a plastic sausage casing or vacuum-packed. Both products can be packed for retail. We have the following options for labelling to improve recognition: • Banderole • Sleeve • Cardboard box • Labels In addition to slicing logs, we also supply deli meat in consumer packaging. These can be packed in thermoformed packaging and re-closable flowpack packaging. THERMOFORMING PACKAGING Packaging made of 2 layers of foil. This packaging method makes it possible to achieve optimum shelf life of meat and meat products. PLASTIC SAUSAGE CASING (SMALL) Retail version of the plastic casing (e.g. 200 grams). For this product we can also use a banderole, sticker or label to make it more recognizable. These products are typically sold individually. PLASTIC SAUSAGE CASING (LARGE) These so-called ‘logs’ are bigger and need to be sliced for retail packaging. FLOWPACK PACKAGING The flowpack packaging for minced meat an excellent example on how to reduce plastics. It reduces the plastic use with 70% compared to the standard PET MAP Trays. Together with customers we are looking for the solutions of the future.
